Recipe: Adzuki Beans over Coconut Rice

Coconut Rice: 

1 (14oz) can of coconut milk 

1 1/2 cups water 

Pinch of salt 

1 tablespoon grated ginger 

2 cups jasmine rice 

In a saucepan combine all ingredients and bring to boil over medium/high heat. Cover, reduce heat, and simmer for 18-20 minutes or until rice is tender. 

You can also make this in a rice cooker! Same instructions…less fuss. Set it then forget it. 

Warning: your kitchen will smell heavenly

Adzuki beans:

1 (150z) can Eden Organic Aduki Beans (rinsed in a colander before adding to pot) 

1 cup water or bone/veggie broth

1 heaping tablespoon red miso paste 

2-inch piece fresh ginger, peeled 

1 tablespoon sesame oil 

Splash of soy sauce or Braggs Aminos 

In a small saucepan, combine all ingredients and bring to boil. Cover, reduce heat and simmer for 18-20 minutes. Serve over coconut rice and garnish with toppings of choice! 

Optional toppings: 

Edible flowers-Nasturtiums are my favorite for their warm peppery flavor! 

Finely chopped cilantro

Nutritional yeast 

Siracha 

Kimchi (highly recommend)

Last week I was in a crunch to munch and had less than 30 minutes to eat before my next appointment. I was in the mood for something hearty and cozy. Rice and beans came to mind 💡 with some Thai/Japanese vibe because I crave Asian flavors as much as I do Persian ✌🏽

Adzuki beans are most commonly used in Japanese, Chinese and Korean cuisine but can easily be substituted in any dish that calls for beans. They are my go-to beans because they don’t destroy my stomach as most other legumes do AND they are packed with: 

👅 antioxidants

💩 loads of fiber

💪🏿 tons of protein and 

🧠 rich in “smart carbs”

These nutty & sweet little things don’t bring on the toots like other beans do because they are low in complex sugars which are not easily broken down by the human digestive system. 

I served these beans over coconut and ginger rice and added some other tasty goods to make a satisfying & filling bowl ready in 30 minutes from start to finish!
