Khiar Shoor

Persian pickles need to be in your pantry.

Simply put, Persian pickles have more punch. They are not sweet like most pickles found in grocery stores and add loads of flavor to sandwiches and various salads (potato, egg, and chicken to name a few).

My favorite store bought jar is made by Sadaf (Tabrizi Style) and can be found online or at Middle Eastern specialty stores. This variety is the perfect balance of sour & spicy and makes me feel quite saucy. The main ingredients are cucumber, vinegar for days, dill, and garlic. Some varieties include hot peppers for extra heat.

*If you live in or near Portland OR, you can find these crispy cool cats at Barbur World Foods or Rose International Gourmet on Murray Blvd.

Just a tip: guess what the secret ingredient is in my “WHAT’S IN THAT?!?!” aioli sauce? You guessed it. I combine mayonnaise with a splash of Persian pickle juice, dash of salt, and sprinkle of cayenne pepper and sumac. I add it to my sandwiches and burgers but who’s to say you can drink it straight from the jar??? I know I have.

Salamati,

ps. National Pickle Day is on November 14th. If you want to make your own variety for the special day, here is a recipe that looks delicious! If you make it, I'd love to hear how it turns out.
